My Favorite Summer Salad Recipe

Quinoa salad

Looks tasty, right?

This salad is definitely drool-worthy, and it never fails to draw compliments! The colors make it beautiful and unique, but the taste is singular: the balsamic and orange combine to dress the salad with a unique flair, complimented by the gojis.

It also packs a powerhouse of nutrition – the strengths of spinach, a complete protein within the quinoa, plus the added superfood kick of the goji’s. Definitely a winner!

Prep time: 5 minutes

Serves: 1 meal or 2 side salads


3 large handfuls spinach
1 cup cooked quinoa (I prefer red, as pictured above)
1/2 orange
1 handful goji berries or other dried fruit (cranberries also work well)
2 tbsp balsamic vinegar


  1. Put the spinach on the bottom, and sprinkle the quinoa and goji berries on top.
  2. Chop the orange, and add that to the mix.
  3. Drizzle the balsamic over the top. Add more if desired.
