Our New Breakfast Favorite: Avocado Toast

Avocado Toast
Breakfast is the new favorite meal in our house for one simple reason: avocado toast!

Have you ever tried it? It’s amazingly delicious.

It’s also a great way to start the day. Just 1/2 an avocado (about 2/3 cup or 100 grams) packs in some awesome healthy fats that will help keep you full until lunchtime. Many of my weight-loss clients in the past have feared fat, so I want to stress that fat does NOT make you fat! Even better, avocado has mostly monounsaturated fat.

Monounsatured fat is commonly regarded as the best type of fat, lowering your “bad” cholesterol (LDL) and boosting the “good” cholesterol (HDL).

In addition, just 1/2 avocado has 485 mg potassium (13% of what you need in a day) – that’s more potassium than is found in a WHOLE banana! It also packs in 7 g dietary fiber. This is the stuff you need to keep your digestive system moving, earning avocado the title natural laxative.

It’s also high in vitamin B6 (15%), vitamin C (16%) and Magnesium (7%).

And avocado, mashed and smeared on 100% whole grain toast, is incredibly delicious.

(At least, that’s what a family member said who came over mid-breakfast to babysit my son, and ended up eating my toast!)

A big bonus – it’s quick & easy (like all of these awesome recipes), and you likely have the ingredients on hand already, though you might have to make a mental note to get an avocado on your next grocery run.

I used to have a rough time choosing ripe avocados until I learned a ninja trick. It’s hard to find that point where it’s soft, but not overripe, am I right?

To check if it’s starting to brown, use your thumb to pop off the stem. The flesh underneath should be green and yellow. If it’s brown, the avocado is overripe.

I LOVE that trick. It’s unbelievably easy, right? I admit, I’ve had some funny looks at the grocery store, but it’s never failed me. 🙂


Recipe: The Key is the Right Ratio

To whip up amazing avocado toast in no time, you’ll need:

  • 2 pieces of whole grain toast
  • 2 tsp olive oil
  • 1/3 – 1/2 a large avocado
  • salt and pepper to taste

To assemble your masterpiece:

  • Toast your bread
  • Drizzle the olive oil on top
  • Spread your mashed avocado atop that
  • Add a dash each of salt and pepper

And voila! Yummy breakfast!

Or, as my son likes to call it: “ah-ga-ga-goh deep!” (Avocado dip. In his world, everything spreadable is dip.)

  1. Yes, love this as breakfast. I have it with gluten free multigrain bread and a fried organic locally produced egg on top. I also use Herbs de Provence and Himalayan sea salt on mine.
