Kid-Friendly Fritata

The key to this kid-friendly frittata recipe is making it your own.

It’s a very easy recipe, but can also time-consuming to chop the veggies. BUT – since it will feed your family dinner for 2, or even 3 days – it’s definitely a good investment of your time!

You can even go vegetarian and dairy free – choose your own ingredient combos to match your needs. It’s also a great way to get veggies in! Be sure to add your favorites.

Here’s my approach.

Prep time: 20 minutes (unless you’re a speed-veggie-chopper)
Cooking time: 25 minutes

2 tablespoons grapeseed (or any other) oil, separated
1 large onion
3 cloves garlic
8 oz mushrooms
1 handful asparagus
1 cup corn
1/2 pound meat of your choice (pictured above is ground beef)
8 eggs
1/2 cup shredded cheese of your choice (above is Mexican)


  1. If you’re adding meat, start cooking the meat.
  2. Preheat oven to 325.
  3. In large frying pan, saute chopped onion in 1 tablespoon of oil over medium heat until translucent.
  4. Add minced garlic, cook until fragrant.
  5. Add chopped mushrooms, asparagus (cut to about 1-2 inch pieces), and corn, cook until mushrooms are soft.
  6. In a large mixing bowl, beat the eggs. Add veggie mixture, meat, and cheese, mixing thoroughly.
  7. Heat 10″ cast iron pan on medium with 1 tbsp oil for 1 minute. Coat pan with oil.
  8. Transfer contents of mixing bowl into cast iron pan. Cook until outside edge and bottom brown, about 10 minutes. (Peel away to peek.)
  9. Move the cast iron into the oven, cook until brown on the bottom – about 15 minutes.
  10. Let cool, serve & enjoy!

You will likely have plenty of leftovers – hooray, less cooking! Plus, your leftovers will be yummy hot or cold.
