Overnight Banana Oatmeal Recipe

I fell in love when I found this recipe. It’s only a few minutes of prep time, and you end up with 4 servings of oatmeal ready to go in your fridge at a moment’s notice. It tastes amazing, and doesn’t have the added sugar found in the prepackaged stuff I ate all the time as a kid.

Plus, you can make it to your tastes, thicker or thinner. You can enjoy it hot, cold, and topped with all sorts of delicious options. Let’s get down to it, shall we?

Oatmeal Recipe

Serves 4


Oatmeal Ingredients

  • 1 cup old fashioned whole grain oats
  • 2-4 tablespoons chia seeds (more for thicker oatmeal)
  • 2 cups milk (or dairy-free substitute such as almond milk)
  • 1 tbsp coconut oil
  • 3 very ripe bananas, sliced
  • 1 tsp vanilla extract
  • 1 tbsp cinnamon
  • Optional: 1 handful berries (fresh or thawed from the freezer), nuts, etc.


  1. Divide the oats, chia seeds, and milk into 4 mason jars.
  2. In a small saucepan over medium heat, warm the coconut oil. Add sliced bananas, cinnamon, and vanilla. Mix well, and saute for 3 minutes.
  3. Divide the cooked bananas into 4 mason jars, stir well, cover and move to the fridge. Let sit at least 8 hours.
  4. Enjoy cold or microwave for 1-1.5 minutes to heat. If desired, top with fresh berries or nuts. (I recommend strawberries!)
